Pizza Dough Compass helps you plan a pizza dough from start to finish: how much yeast to use, when to do each step and how to tell when the dough is ready.
What it is for
The right amount of yeast depends on how long the dough rises and at what temperature, not only on the flour. The app turns your plan (time, fridge, room temperature, flour and method) into a yeast dose, a timeline and practical instructions.
What you get
- The yeast amount, fresh and dry, for the whole dough or for the final dough when you use a preferment.
- Biga or poolish quantities, with their own timeline and signs of readiness.
- A timeline with bulk fermentation, fridge, warming and final proof, and when to divide the dough.
- Visual and tactile cues to tell when each phase is done: volume, bubbles, elasticity and the finger test.
- Suggested ranges for every value, pre-filled with sensible defaults for each type of pizza.
- Optional reminders at the key moments of the plan, in the Android app.
- Italian and English, chosen from the language of your device.
- Clock times from the start or from the baking time, and suggested oven temperature and bake time for home and performance ovens.
- Your last values are saved on your device, so you find them again when you reopen the app.
How to use it
- Choose the type of pizza, the flour, whether you use the fridge and whether you use a preferment.
- Check total time and hydration: the other fields unlock with suggested values.
- Adjust what you need: amounts, temperatures, mixing method and times.
- Follow the timeline and, above all, what you see and feel in the dough.
Good to know
The numbers are estimates, not exact science. Flour, water, room temperature and the real temperature of the dough change from one kitchen to another. Trust the dough over the clock.
How the calculations work
Privacy
Pizza Dough Compass does not collect, send or share any data. Everything you enter, including your last values, stays on your device. The app has no accounts, analytics, advertising or trackers, and it sends no data over the network. The optional reminders are scheduled on your device: the app asks for the notification permission (and for exact alarms) only for them.
